Black apricot tastes like apricot, cherry plum and peach. The fruits of the Black Prince, when picked, have a lightish flesh, and at the same time a slightly sourish sweet taste, which after a few days of storage turns to a ruby color, while having a purely sweet, aromatic taste.
It is advisable to pick the fruits a little earlier than their full ripening period and let them settle for several days. They are picked in advance, since when fully ripe, black apricot has a tendency to shed fruit due to overripeness. Mainly used for fresh consumption, making compotes, etc.
